The easiest Red Snapper you’ll ever cook

Like every week, Gab, Sydney and I went on our usual grocery run and visited the local seafood shop. 

Now that Sydney is over 12 months, she basically eats what we eat. While I cook specifically for her on occasions, I have now made it an habit to prepare simpler dishes for us so that she can have what we have most of the time.

The spring-like weather inspired us to buy something that we could do relatively quickly on the bbq. So here is my extra easy and toddler friendly Red Snapper recipe with a refreshing mixed salad to cleanse the palate!

BBQ Toddler Friendly Red Snapper

Difficulty: Easy

Time: 30 minutes

Quantity: 3-4 people

Ingredients - Snapper
  • 2 fresh whole Red Snapper
  • 6 spring of rosemary
  • 10 leaves of sage
  • 2 lemons
  •  Salt and pepper to taste
  • Spray olive oil
Ingredients - Mixed salad
  • 1/4 red cabbage
  • A hand-full of dried cranberries
  • 6 cherry roma tomatoes
  • 1 carrot
  • A hand-full of lettuce
  • EVO
  • Balsamic glaze
  • Salt & pepper to taste
Method
  1. Wash the snappers and pat them dry with paper towel;
  2. Season with salt and pepper, and stuff with the rosemary, the sage and the slices of one lemon;
  3. Lay the snappers inside a fish grilling basket and spray the outside with olive oil;
  4. Put the basket on the hot BBQ, and cook for about 10-15 minutes on each side;
  5. Meanwhile, wash all your veggies;
  6. Grate the carrot, slice the cabbage, chop the tomatoes into little pieces;
  7. Add all the salad ingredients into a bowl, season with salt, pepper, the balsamic glaze and the EVO;
  8. Once the fish is fully cooked and deboned, place the salad on the plates and serve the snapper with a dash of EVO, a squeeze of lemon and add a sprinkle of salt and pepper.
